Apple Cider Vinegar Dijon Vinaigrette

A few quirks I have...
-I eat an obscene amount of sweet potatoes. I mean, there are days I eat probably three in a day. I don't get tired of them. It doesn't matter if I eat one every day of the week. and yes, that has happened on more than one occasion.
-Every time I turn, change lanes, back out of parking spot, I use my blinker. I then yell at anyone who doesn't use their blinker. Blinkers have some strange importance to me, obviously.
-Mice don't freak me out, but if I see a spider any larger than my pinky nail I'm bound to shriek and run the other way.
-I go through phases of either passionately loving something or it becomes completely forgotten. Really, I think this has to do with my all or nothing personality.
-I take shots of apple cider vinegar every morning. It burns, but it's healing properties are powerful.
That last one leads to this dressing. Sometimes I really can't pull myself together enough to pull out the shot glass (yes, it's that serious) and swallow. I do still think it's really important to have ACV daily. It helps balance your pH first thing in the morning, betters digestion throughout the day, and has immune boosting properties. Next time you have the flu, chug this witchcraft and you'll knock out that illness in a matter of days.
This dressing is one of those ways I like to get raw ACV in my life.

Apple Cider Vinegar Dijon Vinaigrette
Ingredients
1/4 cup raw apple cider vinegar
3 Tbsp Dijon Mustard
2 tsp maple syrup
2 cloves of garlic
1/2 of a bunch of green onions
3 tbsp of olive oil
To make you simply throw the ingredients into a high speed blender of a small personal blender (these are great for making dressings).
Depending on how strong you like your garlic and apple cider vinegar, you can always cut it with more oil but add a little more maple syrup.
I would blend on high for thirty - forty seconds. This allows the oil to pulverize and thicken the dressing more.
Serve on a salad or over a potato or steamed veggies.
